With its rich, creamy sauce and hearty ground beef, this dish is the perfect comfort food to enjoy on a chilly evening. It’s quick and easy for weeknight meals, and could even be a one dish meal! Or you could serve it with a salad or mixed veggies.

Why Ground Beef Stroganoff Dijon?

The main reason for choosing ground beef over thinly sliced beef tenderloin or sirloin is that it’s usually cheaper. It’s also easier to work with. And with ground meat, you know there will be some of it in every bite.

As for the Dijon, it just adds a touch of spice to the traditional Stroganoff sauce. The traditional is full of those wonderful umami flavors from beef and mushrooms. But the Dijon gives it a little more flavor without overwhelming it or completely changing the character of the dish.

Tips for Making it Great

These are some additional tips and tricks to make sure it turns out great every time:

  1. Use High-Quality Ground Beef: For the best flavor and texture, get for ground beef that is at least 85% lean. This will provide the right balance of richness and leanness.
  2. Don’t Overcook the Beef: Be careful not to overcook the ground beef, as this can make it dry and crumbly. Cook it just until it’s no longer pink, then remove it from the pan.
  3. Sauté the Mushrooms Properly: Take the time to properly sauté the mushrooms until they’ve released their moisture and developed a nice, caramelized flavor. This will add depth to the overall dish.
  4. Don’t Boil the Sour Cream: Once the sour cream is added, be sure to only gently simmer the stroganoff, as boiling can cause the sour cream to curdle.
  5. Adjust Seasoning to Taste: Taste the stroganoff before serving and adjust the seasoning with salt and pepper as needed. The amount of seasoning required may vary depending on the saltiness of your broth and personal preferences.
  6. Serve Over Egg Noodles or Rice: The classic accompaniment for stroganoff is egg noodles, but it also pairs beautifully with steamed rice. Choose whichever starch you prefer, or even try it over mashed potatoes for a heartier meal.

Customizing It

There are lots of ways to change this dish up and make it a little bit different every time you serve it!

  • Skip the Dijon. This gives you a hearty ground beef stroganoff that’s absolutely delicious with a bit less spice.
  • Vegetarian Stroganoff: Substitute the ground beef with plant-based ground “meat” for a delicious vegetarian option.
  • Chicken Stroganoff: Use ground chicken or turkey instead of beef for a lighter version.
  • More Mushrooms: Increase the amount of mushrooms or use a variety of mushroom types (such as cremini, shiitake, and oyster) for a stronger mushroom flavor.
  • Spicy Stroganoff: Add a pinch of cayenne pepper or a teaspoon of paprika if the Dijon isn’t bringing enough heat.
  • Stroganoff with Peas: Stir in frozen peas towards the end of cooking for a pop of color and sweetness, and a nice crunchy texture.
  • Stroganoff with Herbs: Garnish the finished dish with chopped parsley, dill, or chives for a fresh, herbal note.

No matter how you choose to customize it, Ground Beef Stroganoff Dijon can become a favorite at your house

  • 1 lb. ground beef
  • 8 oz. mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp. butter
  • 2 tbsp. all-purpose flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tsp. Dijon mustard
  • 1 tsp. Worcestershire sauce
  • Salt and pepper, to taste
  • Cooked egg noodles or rice, for serving

Instructions

  1. In a large skillet or Dutch oven, add the cook the ground beef over medium-high heat, breaking it up with a wooden spoon as it cooks, until it's no longer pink, about 5-7 minutes.
  2. Drain any excess fat from the pan.
  3. Add the butter to the same pan and melt it over medium heat.
  4. Add the diced onion and sliced mushrooms, and sauté until the vegetables are softened and the mushrooms have released their moisture, about 5-7 minutes.
  5. Stir in the minced garlic and cook for an additional minute, until fragrant.
  6. Sprinkle the flour over the vegetable mixture and stir to coat. Cook for 1-2 minutes, allowing the flour to lightly toast.

  9. Gently fold in the cooked ground beef and let the mixture simmer for an additional 5 minutes, stirring occasionally, to allow the flavors to meld.
  10. Serve the ground beef stroganoff over a bed of hot, cooked egg noodles or steamed rice.
  11. Garnish with chopped parsley or chives, if desired.
